Beginners questions on RX100

I'm not familiar with the Sony interface, and am used to using cameras with fairly simple autofocus.
I've found the Sony eSupport site an that's helpful, but I'm still struggling with the following:
Is there a guide to what the various shooting screen icons stand or? I can work out what quite a few of them mean, but the flashing hand-camera-! has me lost, as does the two round shapes on top right.
When I first tried the camera face detect was on, and I was framing the picture, shooting, and finding the composition had changed and the top of the head was missing! Can this be avoided? I've turned face detect off at the moment.
How does focus tracking work please?
Usually when I press ? It comes up with an explanation of Portrait Mode but I can't work out how to find an index, other than scrolling through. I realise I can press ? at various menu options to get to a specific topic, but is there an index? I was specifically trying to find the section on focus tracking?
Finally when I deleted a movie I accidentally shot, I then went back to view yesterday's still shots and couldn't find them! I managed to press something that showed three folders and the shots were in one of those , but I can't work out what I pressed incase I need to do this again. Can anyone advise?
