In addition to what you describe, I'll often "bump" the (back) AF button during a flyby to re-acquire/ensure focus lock, just in case the camera locked onto something besides the head.  Gives you at least a fighting chance.  And those of us who don't have an xD series camera, be sure when in AI Servo to ALWAYS acquire AF lock using the center AF point.  That is hard-coded into the camera.
