Best low-light performance other than DSLR?

Low-light performance is my top priority in picture-taking, but I also want to avoid DSLRs because of the noise made by the mirror. The basic way to get better low-light performance is to have a bigger sensor, but other factors affect it such as CMOS, pixel count, and of course the lens's maximum aperture. Otherwise I'm open to various types of cameras. The Sony mirrorless system may have the biggest sensor of any non-DSLR, but there are cameras with smaller sensors that are also good in low light, such as the Fuji F10. I'm wondering which of these approaches works best over-all. I like to shoot performances and wildlife, both of which favor being quiet and inconspicuous.
