copyright: what are the five or 7 most important things you do to protect your work?

I have done cosiderable work for a local college. On my invoice I give them permission to use my work in whatever ways they choose to promote the college--assuming in the old way of thinking, this would mean on their website or print materials. I use to send them beautiful Iimages from time to time as gifts, in order to oil the engine for future work.
I also laid out my expectation that they would give me credit each time my work was used.
Then a few days ago I saw one of my images on Face Book, which 347 loved, but without any credit to me, as the creator and source.
I have also poked around and discovered they were giving selected photographs away to the media on a news and media page, without giving me credit or stating that I was the owner.
So a newspaper could take one of my iaages and copyright it as their own. It's out of control over there.
If you have 5 or 7 requirements or contract stipulations for the use of your images by a university or small local company, what would they be?
What is the best way to go forward, in a way that does not burn my bridge with them as a source of income?
I have laid out these violations in an email and requested a face to face meeting with one or more of the staff at the Communications and Media Office. I want to keep the meeting matter of fact, firm, and constructive, without provoking defensiveness on their part because I have stated something poorly
What are your suggestions?
