Best lens for a D800E and landscape panorama shots

Excuse my ignorance but isn't DOF more a function of Fratio? Rather than focal length? I realise a longer focal length gives a more blurred background more easily but 85mm may just require a higher F ratio to get your DOF? Or do I have that wrong?
