Exposing to the right at base ISO (using the highest exposure that's possible without clipping important highlights) will both give you minimum noise and maximum DR. The E-M5 is biased towards more highlight headroom, and if you don't take full advantage of that headroom (take full advantage of the sensors saturation capacity), then you won't get maximum DR.
