If your editing is done entirely using Layers, you can always get back to the original. And of course you can work on a copy. If you shoot RAW then save your processed file in PSD format you have the full flexibility and power of Photoshop and you still have the RAW file to re-process if you need to.

You're right about keeping your layers and working with PSD files, but in my experience they are enormous, twice as large as a typical RAW file.
