D700 - What did i miss?

The thread that you refer to is about folks that have specific needs and wanting a camera to fit those needs. I don't believe it has anything to do with being afraid of the 36mp.  It certainly doesn't frighten me.   If you don't need 36mp in a camera that won't do what you want it to do, why would you buy it?

As for you missing something, I would think it obvious that you haven't. You said you have no complaints with the d90 and d800.  So, the d700 wouldn't likely offer you anything that you need.

As for what a d700 offers that a d800 does not, the d700 is a high speed, high performance camera. The d800 is not.  Some folks need that, others don't.  No big deal.
