Probably the sunlight in Mexico is a lot brighter than the sun in the colder climate where you live, right? So even if the camera is exposing for middle gray, possibly the sunlight contrast in Mexico is so high that the brightest part of the scene exceeds the camera's dynamic range limit. Not to belabor the obvious, but that would explain the blown highlights. So to keep the highlights from blowing, you would have to either under-expose the scene, or else possibly use the HDR Backlight Control.

Even the summer sun is very different from the winter sun. I know that in my region, the summer sunlight often challenges the limits of my camera's dynamic range, but I can more easily take a photo during a sunny fall or winter day.

That might also explain the over exposed shots in Barcelona Spain.
