Landscape Photography Gear Selection

For almost a month I having been trying to select the best Nikon body and lens for around $800. I narrowed it down to the Nikon d5000 ($275) and a Nikon 16-85 ($425) lens. I have already purchased the lens but not the body yet.
Here is the kicker! I am now considering changing tactics and going for a Canon set-up. In particular a Canon T2i ($350) and a 55-85mm ($500) lens.
Up to now I have been focusing on the SPECS that I see on sites like DXOMark which show the Nikon to kill the Canon's. But recently I started to pick up on the vibrant and saturated colours that come from the Canon's. They are looking a little flat in the Nikon's. I like photos with these brighter colours.
Would I get these Canon colours in a Nikon if I adjust some settings? What is your opinion on these two options mainly for landscape and sunrise/sunset photography (I want to keep ISO low all the time)? Your thoughts would be much appreciated.
Oh yeah, and I have to purchase this by Saturday of this week because I am heading to Arizona for a month!!
