Apple's policy has been to restrict USB use to importing photos from a card or camera.  Unless it's been hacked, I believe there is no way to control a camera via usb from an iPhone or iPad. All you can do is copy photos.

The solution from an iPhone or iPad would be to control the camera using Wifi, with the CamRanger or Canon's WFT-E7.

If you want to do it via a USB cable, you'll have to go for an Android phone or tablet that has a usb connector, and then you get a choice of apps that will do it.
