Hi Kevin,
I was happy to read your post. It well may be because your advice match my thinking, which is based on the several latest Bare Feats posted comparison reviews (find below)/ In every test 21.5" with I5 was very close to I7 and for few tests equal or above. I assume that 27" with I5 for photography (still images) would perform the same. The Bare Feats are sill waiting for their 27" iMacs promising to add the 27" iMac test results to the all listed below (I think that are clickable).
