Looking at SanDisk, they seem to do 30Mb/s, 45Mb/s and 95Mb/s - all Class 10 cards. If I spend more to get a faster card, will the camera be able to reap the benefits?

Mate, just stick with SanDisk. I've used all the brands and SanDisk are consistent.
I bought the Extreme SDHC card for my NEX-7 and the price was super low. Go to mymemory.com
I don't work for them (people on here think any recommendation must be from the seller) but they are cheap.
