Opinion:

I think the way you sharpen does not matter,  what matters is a result. When I over-sharpen my photo, I do UNDO and try again

All 3 versions are overly cooked: over-sharpened, over-contrasted, over-saturated, etc.

This is my opinion, my taste. You can reject my opinion and stand by yours.
