If you're going to pretend to be smart (Even of the ass variety) then do check your spelling.
Hi Jen,
I have found several posts that confirm the MacMini ability to drive two monitors, however no posts on ability of each monitor to be calibrated as independent units. I have one monitor and may add later another one.

Being able to select a profile for each monitor has always been a feature of Mac OS X, if I remember correctly. So calibrating them individually should work just fine.
Eric,
Thank you. My plans for iMac or MacMini are LR and PS CS - photography (no video). Currently I am struggling selecting between MacMini and iMac 21.5". Each one has to be configured at the time of purchase
MacMini vs iMac 21.5" both loaded with with i7, 16GB and 1TB Fusion Drive. is about $600 less ($1449 vs $2149). This $600 advantage melts down by adding an equivalent monitor.
The iMac still would have some advantage - better/faster video card and two vs one Thunderbolt ports.
The speed test scores by Bare Feats shows MacMini integrated video disadvantage rather than that MacMini is somewhat ahead.
The 27" are +$300 with a larger screen, little speed advantage and user upgradeable to 32GB.
The iMac21.5" max memory is only 16G. My current imac (2006) recognizes only 3GB and is slow. I am not sure how long the 16GB advantage would last. In 2006 my 2GB iMac (before memory upgrade) was very fast :-).
