I think the problem is just that the camera hast to stuff all the information into an 8 bit file if you shoot ooc jpeg.

Without telling the camera how to do that (how much contrast to apply etc etc) it has to use some default setting. Some cameras use very neutral default settings, some might be a bit more aggressive.

The camera itself can capture way more information than you can store in a jpeg.

I think makeitso made a valid point: the best way would be getting familiar with the camera settings, in this case the processing stuff (jpeg) and try different approaches (more/less contrast etc etc) - or shoot RAW. After all the jpeg settings are just more or less a predefined "template" for putting the raw sensor data into a final result.
