Since the lens is so important, I want to be sure I'm future proofing myself and not getting pigeonholed right out of the gate.
Short version: no
Buying Sigma because they make Nikon and Canon lenses is like buying Adobe because they PC and Mac versions.
Lens mounts are not inter-changable. Nikon lenses (no matter who they are made by) work on Nikon bodies. And the same applies to Canon lenses. There are some adapters, but it is best to ignore them as they don't work well enough to bother with for most people.
