I agree that the difference you see is in how the jpegs are cooked by Pany, in particular contrast and saturation.  The Sony is capable of greater color depth, a wider dynamic range and more detail than the Pany, and in fact, it isn't even close so long as a good lens is used and focus is correct.  Try switching to vivid color mode and increase the contrast setting as well and see if you get closer to what you like.

Since no one seems to be able to really understand what you want, you're going to have to experiment a lot and see where that gets you.  Your time might be well spent by starting with simply processing the pics you currently don't like, to see what adjustments (sharpening, contrast, saturation...) get those pics closer to your liking.  Or, just buy another Pany.
