I can hand hold my 70-300VC at 1/30 sec and get better results than both shots.

That is the point... At 1/30 or even slower - it looks like VC works OK... But try shooting at 1/125 with and then without VC and look at photos at 100% (even at the camera screen)... I am sure (not always though - you will see the issue I am experiencing along with many other photographers... It may be not as dramatic as 18-270 PZD I posted above, but you will see it, especially if you are shooting with D7k or D800 (same pixel size)...
