I've haven't yet done any yet with the 7900 on German Etching paper, but I have a request for a reproduction of a Japanese Print, Hiroshige's "The Great Wave Off Kanagawa". At the same time, I might try a small repro of Vermeer's "Girl With the Pearl Earring" and maybe some Egyptian tomb painting or an Itallian fresco, just to see.
In the past, I've used Canon's rebranded "Museum Etching Paper" for some reproductions of Edward Curtis' portrats of Native Americans. I would start with his B&W versions and render them into a selenium tone in PS, and print them on a Canon 9500. The results were very good.
