In Cam (DSLR) settings for better shots

I haven't tried this myself and I mean to so I can work some things out, but wanted to hear perspectives from other Oly DSLR users.... (let me specify that this is not another m4/3 post :-P)
Earlier this summer I met a really nice photographer who has the blessing to travel and do photography full time. I did not see what exact camera he had, but I belive it was a 5D2. Regardless, after we photographed together for about an hour and exchanged information, I went to look at his work online and am quite impressed... http://www.brettdonnelly.com/
What impresses me the most is the fact that a lot of the images are special for 2 reasons.
1. Most of his images are SOOC, no post processing other than crop, all colors obtained by making in camera adjustments.
2. Extremely long exposures - while Oly is certainly and notably weak in this area due to noise, this photographer purposefully awaits pre-dawn or dusk to obtain his images using extended exposures while the in cam adjusted settings grab the color.
I have been wondering about trying to do this with my E-3.... has anybody tried doing extremely long exposures (5-10 minutes) after sunset or prior to sunrise while adjusting the reds and what not in the camera to capture the color tone you want... this is more than a simple WB adjustment that would need to be done and I suppose the noise filter would need to be set to high.
I plan on trying this come spring unless I can think of a great winter scene to try it with.... would love to hear other folks opinions and ideas on this.....
