This magical difference has been mentioned over and over here in DPR. Does it justifiy the great difference in price tag?
The difference is not sky and earth big but still visible. As whether difference justified for hefty price difference or some weight and size difference, is totally subjective to individuals. That is similar between EF-S 18-55/3.5-5.6 IS and 17-55/2.8 IS, or 24-105L/4.0 IS and 24-70L II. To me the answer is YES but it may only reflect in 10% (but bigger in many times) of IQ difference.
As I see in your gear list, you own both the EOS 60D and the EOS 5D MkII and an impressive array of EF-lenses. You would do us a great favour if you demonstrate the difference you talk about with comparison shots done of exactly the same scene with exactly the same (or corresponding) settings at comparable focal length (focal length for FF camera / 1.6 = focal length for crop factor camera). It would be great to do this with real landscape scenery or portraits, so that we can assess real world performance. Thank you very much in advance.
When you shoot landscape or portrait, your concentration is to fit the subject into frame regardless of crop format. You usually can move freely in these scenarios so crop factor is not an issue here. I can see the noticeable and sometime significant difference between FF and APS-C in these two areas. In short, the photos from FF or APS-H look more popup, more 3-D look, hard to describe but the difference is noticeable, better in natural sharpness, smoother and creamier in color rendition, better in color tonality and of course better in high ISOs. My 5D2 even old 5D1 is noticeably better in highlight clipping.
I don’t intentionally to compare 5D2 to 60D as they service different purposes. Here are two samples that happen I shoot side by side. I have a few more not side by side but against the same scenes (uanble to post here as I unable to access my zenfolio site from office PC).

60D+Sigma 17-55/2.8 OS
5D1+24-105L
60D+Sigma 17-50/2.8 OS
In one area I found the difference is quite noticeable that is close-up portrait. I have to use NR to clean noticeable grains/noise on skin that something I don't need to do on my 5D and 1D3. They look different. Photos from 5D/1D3 look noticeable smoother and creamier while from my 60D looks a bit harsh and grainy (that I have to run NR as I said). For example anyone can show us 7D/60D 100% cropped (or even downsampling to 12.8mp size) of close-up face snapshots to see if they can match the clarity and natural sharpness as from my old 5D1?

You will know once you get a FF body, generate some photos especially in close-up portrait and landscape with L lenses, compare them side by side, you will know the difference in sharpness, clarity and tonality, subtle but noticeable and sometime quite obvious.
