I shoot always handheld with G3 + 100-300mm.
On a day with good light you can use fast shutterspeeds (1/300 and faster).
For animals (birds) I use A-mode, auto ISO (max ISO 800), F6.3, whitebalance: sun or cloudy.
When you shoot jpg: turn noise reduction off! With noise reduction you loose a lot of sharpness/details, even at low ISO! For JPG the "Intelligent Resolution" setting works good too!
The photos are very sharp.
