So....a 7D with a USM lens?

Either a Canon 7d, Nikon d300 or Nikon d7000 would work reasonably well.  Pair with the last sigma 70-200 before the current one. (exact model in another thread).

Between these 3, the Nikon d7000 does the best in dim light.  While I trust the focusing of the d300 the most.  The Canon has slightly higher pixels so you can down-size the image to try and mask the ISO noise you're going to get if you go with that one.

Thinking about it for a few more mins and given the size, weight, cost...  I'd probably go with the d7000 unless you can find a really good deal on a Nikon d300 (or d300s) used.
