Note: Manual says Spot only meters the center of the frame.

All the HS series cameras are the same in how their metering works.

And yes AE lock is the correct method to do what you want.

I regularly meter on an object other than the subject to get the correct look and exposure, press the AE lock button (which I have permanently set to AE lock), move back to the target refocus and take the shot. Just remember to press the AE lock button again to release the AE otherwise your next shot could be a real bummer.
