Search the App Store for "DOFMaster". It allows selecting the CoC.

It seems it allows you to select the old standard CoC for select sensor formats, but does not allow you to choose a random CoC. I guess you can interpolate from the ones provided to optimize DOF.

I like the interface of DoF Plus better, but I think it costs $9.99. It allows custom CoC settings. It will also calculate the field of view in size and degree.

What CoC would you choose for a D800E doing 20x30" prints (240ppi)? The default for Nikon FX seems to be 0.030 mm. I'm guessing you would want something around 0.20 or 0.015 mm.

It depends on the viewing distance. But if you want to look at the image close up (as i know we photographers do and also people at exhibitions) it would for an image of that size be be more like 0.01 to 0.015mm. I.e. not going beyond f/8 to f/11.

Clarificarion:

f/8-f/11 would be at point of  focus. For extended DOF you would naturally need larger apertures. Unfortunately this means that we need to use true wide angle lenses (less than about 24mm) for any images with foreground interest, unless you use focus stacking or other PP techniques.
