I suggest you learn to use hyperfocal focusing. I have an app for my iPhone.

Does it allow you to select CoC (Airy disk diameter)?

When settiing the focus point for hyperfocal distance you maximize you foreground/background focus.

That being said, just because everyone shoots landscape stopped way down does not mean that you always have to follow the crowd. Consider what your subject is and how a shallow depth of field might create an unusual effect that distinguishes your work.
