The other implied assumption is that a full frame sensor is some kind of 'standard'. There is no magic sensor size that has the right amount of DOF.

24x36mm is "magic" because of lenses: it offers lens choices for DOF control that are simply not available for other formats, e.g. 85mm f/1.2 or 135mm f/2.0 or even 200mm f/2.0.  Equivalents could be built for other formats but between the smaller existing market and size/weight/optical considerations, they never will be - or will be limited to ultra-expensive domains like commercial cinema.

You may not want, need, or value these lens options because of the size/weight/cost compromises for the entire system but they are relatively affordable/usable for the working pro and keen amateur compared to the alternatives.
