I tried Helicon Focus. You can download a fully funtional demo for 30 days. I really like it. Other than that a tilt shift lens would be it. Iam waiting for the Rokinon one I heard about to get a tilt shift lens

In sample below I took 2 shots. One focused right at bottom using live view and one focused at rocks at the farthest section of water fall. You cant really tell at web size but its much sharper using two shots.
