I'd be surprised if identically shot side-by-side shots of the same scene, with the same selected in-focus point and at the same aperture, using the same lens would be that drastically difference in terms of sharpness when going from the D700 to the D800, when say, printed to 11x14, or resized to fit optimally in the same computer screen. Notice the "resized to fit optimally" as I'm assuming you're taking care to resize and sharpen as required for the final display medium, rather than letting software do on the fly, non-permanent resizing.
