Having experienced this same issue using a D300s side-by-side with a D3, and now a D7000 together with a D600, it's definitely an annoyance, but a relatively minor one.  There are times when I would like a sensor at the edge of the frame, but in just about all cases a lock-and-recompose works just fine.
I've found it be of little concern in shooting either sports, travel, event, or corporate photography.
Perhaps the biggest concession has been switching from 9-point Dynamic AF to 21-point for sports.  Which has no down side.
