So what's going on Canon 5D 2 &3 and Nikon D800

Hi guys, this video has been updated with a better comparison showing more equal exposure values, as well as noise reduction at the end.

Noise reduction was turned off for all of the cameras to try to make the test as fair as possible, but Canon does a ton of hardware noise reduction regardless of your settings. This becomes obvious in post where you can actually pull a better noise pattern from the D800 than you can from either the Mark II or the Mark III.

I do not have results using the Nikon in-camera noise reduction, but the differences would probably not have been as drastic if this it was enabled in the D800.
