Can only comment on basis this might help. Have you set the scanner to work in the "Professional" mode?

Most Epson equipment and for that matter, all printers, whatever their make, can have their default settings changed on permanent basis (but can change for once when using as required) if they are set from Control Panel = the basic area for installed equipment like printers, scanners, etc.

As an example, if you changed the paper type when printing, it would only revert to the default paper choice when closed. It would not remember the new paper selected IF you did this only when printing. Change the paper type via the Basic Printer Setting (via Control Panel as mentioned) and the new default will be the different paper type - like always - unless you select for a specific job during use a different setting. It would then be changed for the one job and revert, when finished, back to whatever default you selected as described.

The same principle applies to sorting out what defaults you want the scanner to always adopt (unless changed for any specific occasion when being used).
