I read that there is a trick to get manual exposure on the K5. Can/have any of you tried this? I would love to know if it's possible:

Set your USER mode to Av. 

choose your iso (3200 max!) and aperture, point the camera around until you reach the desired speed (obviously, anything above 1/30!), and press AE-L. 

switch to Movie mode : Exposure is still locked, and it'll be using the settings set in Av mode...

EDIT: this also works on Kx/K7/K5 if you switch quickly between Av and Movie modes, but it's quite hard to do, them being nearly on opposite position on the mode wheel...

Now, regarding the WB problem, you should have a look to "Custom Setting 10. WB Adj. Range" (K7 & K5), and set it to "Fixed".

By default, it's set to "Auto Adjustment", and will fine-tune the WB even when you choose one. 
I'm afraid the Kx only offers the "Auto Adjustment" behavior.
