Stick to Canon. As you are afraid of not getting the same sharpness, nor the same shallow DOF - why on earth would to contemplate switching system?

No it isn't fair to say EOS zoom lenses are as good or better than most prime lenses. Some EOS zooms are very good. But what is "most Prime lens"? You also have to consider "sharpness" making sure you know what it really is you expect and want from a lens or system. No, there are not a number of L zooms used as benchmark for sharpness, at least not outside the group discussing Canon (and perhaps Nikon?) zooms.

The average µ4/3 user writes m4/3 instead of µ4/3 so who knows. Is an average Canon user able to tell the difference between the Canon chroma noise and the Sony chroma noise?

As your post is a bit hard to understand you may be better off reading reviews and specifications yourself. It may also be me being a stupid j**k not understanding the snobbery in our world.

What I see here bordering to snobbery is the group thinking that our system is the best ever, that anyone caring for a larger camera needs to visit their doctor very often and that shallow DOF mainly is used for a substitute by photographers bad at composing images. Oh, many also believe we can make nice typical subject isolation images and prove that by posting numerous shallow DOF images of pet heads and flowers. System snobbery, like a private club. Lol.
