Stability for 64-bit Windows 7 vs 32-bit Windows 7 is a non-issue.
As far as 32-bit vs 64-bit apps go, that is also essentially a non-issue, because 64-bit Windows 7 is essentially just as capable of running 32-bit apps as 32-bit Windows 7, and it even provides some advantages, like being able to allocate more physical memory to 32-bit applications (as someone else mentioned).
As has already been said (assuming you have sufficient RAM, like more than 3Gig) "Always 64-bit" Windows 7.
