Best photographic techniques books and resources

Hello, I do a lot of landscape and plant and animal photography with my Panasonic LX5, but for the most part I just set is on the SCN / Panorama setting on the dials, then point and shoot.
I would like to learn more about cameras, and be able to get the most out of this camera. I would like to be able to improve on the automatic settings (if possible) using the M, S, A, P settings, and know all about f/stops, shutter speed and ISO and how they inter-relate.
I am looking for some resources that will help me do this, preferably with some exercises and assignments using the camera
Can anyone please suggest some good resources, books, tutorials which will help me do this?
regards,
Joe
