Well, Nikon at least publishes angle of coverage specs.

One caution about Sigma specs is that they make lenses for different makes of bodies, and one APS sensor isn't the same size as somebody else's APS sensor. Nikon 1.5X vs canon 1.6X for example. So your would want to read the 3rd party specs exceedingly carefully.

Another consideration is distortion corrections. Some lenses need a pretty strong correction and that can affect coverage area of the distortion-corrected final result,
