Exposure compensation, How much?

Under most situations, in which the subject is not a very bright white, or a very dark color, I have to shoot under by 2/3 to 1 full stop.  A neutral gray subject will require this EC.  Seens to make no difference which metering method I use, neither does the lighting optimizer.
