They only time you really have to see the viewfinder well is for focusing. It is there for framing the image and for reviewing the shots. Normally when reviewing the shots you can position your body to block direct sun. As long as the screen is not totally washed out you can usually frame the shot.

There are things you can do to help. Do not shoot pictures with bright lights shining on the LCD. Either by positioning yourself and the subject or by shading the viewfinder. Most of the popular mirrorless cameras have foldable LCD shades available from third parties, you can also get magnifying hoods like video cameras use. With the small viewfinders that come on most cameras, if you wear glasses the amount of light spilling into the viewfinder can also ruin your view.
