First, my basic understanding of EC is that it works pretty much like brightness,

No, exposure compensation is like exposure compensation - it's not brightness, or pop, or any other vague term. It is merely a way of compensating for what the incamera meter is telling you, which is often wrong... or at least ignorant of the photographers intentions.

and depending on the main emphasis of the photo, I'm sacrificing those perfect skin tones, exposing for immaculate white of the bride's dress because that's the emphasis of the photo.

No reason to sacrifice anything - and no such thing as a 'perfect skin tone'.

Now, if this was all to know, I'd die happy. But I think there is a lot more to EC.

No, there is actually a lot Less than you are reading into it. Exposure compensation changes your exposure parameters, that's all.

To make it easier, can you please write your answer in steps. What is your first step in assessing the exposure?

I look at the scene and say 'it's iso400 1/30th f/4' or whatever - thats the first step, no equipment involved there.

Depth of field?

DOF? What about it? I use it, in 100% of my pictures. Sometimes a large DOF, sometimes a thin DOF - it all depends on what it depends on - the outcome I want.

And then you follow the camera's recommendation for shutter speed?

No, never.

And then correct EC by looking at the histogram?

No, not that either, because only my eyes and brain know what is the 'correct' exposure - merely lining up the incamera meter does not automatically equal 'correct'.

Is this all? Or is it a top of the iceberg?

Not really sure what your question actually is?

You use EC to change the exposure... sounds like you want to know when you should be using EC - but a better thing for you to get is the 'why'. Good luck!
