For bicycling, I worry about comfort and security more than quick access. Forget camera bags if you want to keep you back and camera healthy. Pick up a Deuter Race EXP Air and a couple of neoprene socks to keep your lenses and camera safe. You don't need Kata-style quick draw. That is a fallacy that preys on members here.
For hiking and bicycling of any sort, do your body a favour and simply steer away from camera bags which, for the most part, are very bad for your body.
