Two options: manual mode, auto ISO, function button mapped to Myset combining AEB and continuous drive to get a bracketing sequence around your manually selected exposure or as above but function button has AEL, which is configured to spot metering (standard, highlight or shadow) and you take a reading from an area that gives you what you want. Throw in the option to set up the EVF without live view boost and with highlight and shadow areas highlighted and there's plenty of opportunity to get the correct exposure in manual mode.
