Using manual is a good idea, but to to answer your question, on the 5d3 under C.fn2 there is custom controls. You can change the exposure lock button to "HOLD" in order to get it to hold your exposure.
Thanks, my manual is 2000 miles away which is why I posted here. I'll check that out.
