A semester of college classes provide more information over a broader area. Might teach you to look at a scene better too. Aside from basic exposure, they might teach you something different each week like lighting, perspective, background, placement, rule of thirds, framing, printing, etc.
Most workshops are specific to some theme like "How to work Photoshop" or "How to shoot better weddings" and they can get very expensive for what specific info you might get out of them. Some can be more of a "Look at all the stuff I got and what I can do with it it all too." - i.e. a "sales pitch" with a hefty price.
For the cost of some workshops, you could get far more in a college class spread over several weeks or months or years. I took four semesters and then some. I've also taken some workshops that cost thousands too and wondered if I got robbed at the end.
