The EV setting is easily accessed on the FZ200, and I find it needs to be adjusted to deal with the scene. I typically leave it at -2/3 EV so that I can quickly get a shot of everything, but often it needs to be moved to values as high as +2/3 EV.
Remember that RAW images with the FZ200 typically have almost an extra f-stop of white level above the white level of JPGs. I usually shoot RAW+JPG or just RAW.
