Debating new camera/lens combo, advice needed.

I've been reading the forum for a few weeks now and debating a few options for new equipment.  My current lineup is a Nikon d40 (still works perfectly), a 105 f2 dc, 18-55 kit lens, 70-300 VR, and a sigma 10-20.  However, the d40 is quite dated and I'm looking to upgrade--I havent seriously shot in a couple years and Im looking to get back at it.  I mainly shoot pictures of my 3 year old, which means some fairly quick moving shots!  I really enjoy landscape shots, which I used to shoot more of, and would like to get back to.  So here are the combos Im considering--any advice or thoughts would be great!

1. D600 (new) with a used 20-35 2.8 or the new 24-85 VR (kit lens)

2. D7000 (new) with a used 24-70 2.8 or a used 20-35 2.8+ (used 135 f2 DC or used 28-70 2.8).

3. Keep the D40, but purchase a new 24-70--savings some cash and waiting for used prices to drop on the d7000 or d700 and quite frankly making sure the sensor issues with the d600 have been all worked out.
