How does multi-point AF work?

I know this seems like a stupid question that only someone who barely has ever used a camera would ask.  That said, I don't really know.

Most basically, what does the camera do under 5-point AF?  Every point has a "subject" of some type so what drives the selection of the point for focusing?  Manuals (in my case, K30) never really explore this question but I'm sure many here can.  Thanks.
