Because if you use a D800 you don't need to use the higher ISOs and therefore limit the available dynamic range.

Laughable. The only reason people use higher ISO's is because they do need to. I've never been at a low-light wedding reception and said "gee, I wish I didn't need to use such low iso"

That reveals a fundamental misunderstanding about exposure and its management.

Using the photographers of my three daughters as a sample, the one with the best camera, a5D2, took the worst photos.  There is more to wedding photography than composition.  The 5D2 photographer had no idea how to manage dynamic range and the only outdoor pictures on display at my youngest daughters house are the ones I did with the D700.  The 5D2 photos have NO detail in the wedding gown.
