XP1 Users: How versatile are JPEGs in post processing?

It seems like everyone loves the JPEGs that the X-Trans sensor is putting out.  That is reassuring for those of use with lingering concerns about RAW processing.  But one thing I haven't seen much discussion of is the flexibility of Fuji's JPEGs in post-processing.

For folks with an XP1, how easy have you found it to work with Fuji's JPEGs?  I wouldn't expect them to be as flexible as RAW, but most accounts make it seems like the JPEGs are a bit less "cooked" than usual.  Can shadows and highlights be recovered from them?  Do they respond well to traditional PP manipulation?

Any insight would be much appreciated.
